Mud Hens Merinque Bars

Mud Hens Meringue Bars
1 cup sugar
1/2 cup shortening
1 tsp vanilla
3 eggs
1 1/2 cups self-rising flour
1 cup nuts, dates or coconut
1 cup brown sugar
Cream shortening and sugar. Add vanilla, egg yolks and 1 egg white, then flour. Spread into greased sheet cake or cake roll pan. Sprinkle nuts, dates or coconut on top of batter (use about 1/2 cup of each). Beat the egg whites well (until stiff peaks form) then add brown sugar a little at a time while beating. Spread over batter. Bake at 325 degrees for 30 minutes. Cut into squares. Yum!
